Tozai Snow Maiden is a Junmai Nigori sake produced by the Kizakura Brewery in Kyoto, Japan. Nigori means "cloudy" in Japanese, referring to the intentionally unfiltered nature of this sake, which retains rice sediment for a richer, creamier character. The Tozai brand name bridges East (To) and West (Zai), reflecting its approachable style designed for both sake enthusiasts and newcomers alike.
This sake is crafted from a blend of Gohyakumangoku and Gin-Ohmi rice, polished to 70%, and fermented to 14.9% alcohol by volume. With a Nihonshu-Do (sake meter value) of +6.5 and an acidity of 1.6, Snow Maiden leans surprisingly dry despite its creamy, cloudy appearance. Tasting notes include bright, fresh aromas with a ricey and fruity combination — flavors of honeydew melon, raw pumpkin, and radish — with a creamy texture and full body. The sake was rated 91 points by the Beverage Testing Institute.
The name pays tribute to Hanako, or "Flower Maiden," a legendary Japanese koi fish said to have lived for 226 years in the icy waters at the foot of Japan's Mt. Ontake. Tozai's labels feature hand-painted koi fish, traditional Japanese kanji, and origami paper patterns, celebrating Japan's artistic heritage.
Best served chilled. Flip the bottle upside down a few times before pouring to evenly mix the cloudy sediment. Pairs beautifully with spicy foods such as curry, spicy tuna poke, spicy sushi rolls, crab, and pork. Suitable for any drinking vessel — an ochoko, wine glass, or coffee mug all work wonderfully.
