Shimizu no Mai Pure Dusk is a Junmai Daiginjo sake crafted in Akita, Japan, one of the country's most celebrated sake-producing regions. Junmai Daiginjo is the highest classification of sake, made from rice polished to at least 50% of its original size and brewed using only rice, water, and koji — with no added distilled alcohol. This style is prized for its elegantly aromatic, complex character.

On the nose, Pure Dusk opens with bright pear and hints of green apple, underpinned by a delicate minerality. The palate reveals a refined, light-bodied structure with subtle notes of fresh orange peel and cantaloupe. The finish is clean and dry, making it an excellent choice to enjoy slightly chilled alongside sushi, sashimi, or light seafood dishes. Alcohol by volume is 15.5%.
