Premium USDA Prime beef short loin primal cut sold in full case format. The short loin is located below the backbone in the center of the animal, making it one of the most tender sections of beef. This primal cut contains the Strip Loin (New York Strip), Tenderloin, T-Bone, and Porterhouse steaks. USDA Prime grade represents the highest quality beef with exceptional marbling, tenderness, and flavor. The 2x3 designation indicates a full case wholesale configuration, typically used by foodservice operators and restaurants. Each short loin can be prepared as a bone-in roast or fabricated into individual steaks including Porterhouse, T-Bone, Strip Steaks, and Tenderloin portions. The IMPS/NAMP specification for short loin is 174, which is the standardized industry identifier used for wholesale beef procurement.
