Costco's Fresh King Salmon Fillet is farm-raised Chinook salmon — the most prized and richest of all Pacific salmon species — sold fresh by the pound at the seafood counter. King Salmon earns its name through an exceptional flavor profile that sets it apart from Atlantic or sockeye varieties: its unusually high fat reserves yield deep, buttery, melt-in-your-mouth flesh with a pronounced richness that requires little seasoning to shine.
Farm-raised King Salmon offers consistent quality and availability year-round. The flesh is characteristically deep red-orange, tender, and softer than other salmon species due to its high oil content. This fat content also makes it one of the best dietary sources of omega-3 fatty acids, supporting heart and brain health. Fillets are typically boneless and ready to portion, making them ideal for a variety of preparations including pan-searing, oven roasting, grilling, poaching, or curing into gravlax.
The generous fillet size is suited for family meals or bulk meal prep — portions freeze exceptionally well when wrapped tightly. King Salmon pairs beautifully with simple preparations: olive oil and sea salt, miso glaze, teriyaki, herb butter, or citrus-based sauces all complement its natural richness. Cook to an internal temperature of 125–130°F for a silky, medium finish, or 145°F for fully cooked.
