USDA Choice beef tenderloin tails are the tapered ends of the tenderloin, the most tender beef muscle. These boneless cuts are trimmed from the thin, tapered end of the whole tenderloin after butchers have portioned filets, offering the same melt-in-your-mouth tenderness as premium filet mignon at a fraction of the cost. With an average weight of 4 pounds, tenderloin tails feature additional marbling along one side that delivers exceptional flavor and juiciness.
The cut is extremely versatile and suitable for multiple cooking methods including grilling, oven roasting, broiling, skillet cooking, and sous vide. Tenderloin tails can be prepared whole as a roast, sliced into medallions for pan-searing, or cut into chunks for kabobs, stir-fry, and stew.
