Pork cushion meat is a boneless cut taken from the large muscle of the picnic shoulder, also known as shoulder cushion or picnic cushion (U.S. Pork #2250). This cut is well-exercised and very lean with excellent depth of flavor, making it a versatile and economical choice for a variety of preparations.
Due to its connective tissue composition, pork cushion meat excels with low-and-slow cooking methods. It is ideal for making pulled pork through extended roasting or smoking, braising in liquid for hearty stews, or slow-cooking in a crockpot. The prolonged cooking breaks down the connective tissue, yielding tender, shreddable meat with rich, developed flavor. It can also be used in carnitas, soups, and ground pork applications.
