Bollinger Special Cuvée is a prestigious non-vintage brut champagne from the historic Bollinger House in Aÿ, Champagne, founded in 1829. This champagne represents the signature style of Bollinger, known for its meticulous respect for tradition including manual riddling of bottles and the use of cork stoppers for reserve magnums. The blend is composed predominantly of Pinot Noir (60%), complemented by Chardonnay (25%) and Pinot Meunier (15%), sourced from 174 hectares of vineyards mostly classified as Grand and Premier Crus. The winemaking exclusively uses the cuvée (first pressing) with a moderate dosage between 7 and 8 grams per liter, allowing the purity and finesse of the champagne to shine.

The champagne undergoes extended cellar aging, twice as long as the appellation standards, and incorporates reserve wines kept for up to 15 years in magnums, giving it remarkable depth and aromatic richness. Special Cuvée offers a bright golden hue with delicate, persistent effervescence. The nose reveals complexity with aromas of ripe fruit, spices, roasted apples, compotes, honey, brioche, toasted bread, butter, and lemon cream, complemented by candied lemon and orange zest that bring freshness, along with white flowers. On the palate, this champagne stands out for its structure, length, and vibrancy, unveiling flavors of pear, brioche, spices, fresh walnuts, and vibrant black cherry and boysenberry fruit in perfect harmony. The mouthwatering frame of acidity creates a graceful, well-integrated champagne.

This full-bodied brut champagne has 12% alcohol and pairs beautifully with shellfish including langoustine and grilled lobster, sushi and sashimi, poultry, white meats, smoked fish, fried chicken, aged cheeses such as Parmesan, and exceptional dry-cured hams. The ideal serving temperature is between 50 and 54°F (10-12°C). Critics have awarded it outstanding scores, with Wine Spectator giving it 93/100, James Suckling 93/100, Decanter 95/100, and Robert Parker 92/100.
