Robiola Bosina is an artisanal Italian cheese from Caseificio dell'Alta Langa in the Piedmont region, handmade using traditional recipes and modern equipment. This soft, square-shaped cheese is crafted from a blend of pasteurized cow's and sheep's milk, creating a unique and delightful flavor combination.
The cheese features a creamy, smooth texture with a silky paste and a natural bloomy rind that becomes slightly reddish and sticky as it ripens. Young versions are moist, sweet, and rich, while aged samples develop a creamy, slightly tangy character with earthy and mushroomy notes. The straw-colored interior is encased in a bright white, velvety rind.
Produced in the town of Bosia, between Alba and Cortemilla in the renowned Langhe region, this cheese embodies the agricultural traditions of an area famous for Barolo, Barbaresco, and Asti wines. The milk is thermalized rather than fully pasteurized, preserving the original characteristics of the milk. The cheese ripens to optimal condition around 20 days, developing a runny, supple interior consistency.
