Hypothesis Cabernet Sauvignon is a 750ml red wine sourced from the Money Road Vineyard in the Oakville sub-appellation of Napa Valley, California. Produced by Roots Run Deep Winery, it is a Cabernet-dominant blend of 85% Cabernet Sauvignon, 12% Malbec, and 3% Merlot, with an ABV of 15.0%. The 2021 vintage earned 91 points from James Suckling, and the 2019 vintage received a Gold medal at the San Francisco Chronicle Wine Competition. Costco sells this wine in cases of six 750ml bottles.
Roots Run Deep Winery employs a rare Flash Détente pre-fermentation technique, in which grapes are rapidly superheated and then cooled before fermentation begins. This process ruptures the skins to extract deeper color, more intense tannin structure, and richer fruit character. Following fermentation, the wine is aged in French oak barrels for 18 to 24 months before blending.
Deep garnet-purple in color, the wine opens with aromas of ripe blackberry, warm plum, violets, and sweet basil, with secondary notes of spicy oak and clove. On the palate it is bold and fruit-forward, with flavors of baked blackberry, dark cherry, and blackcurrant supported by firm tannins and hints of spiced dark chocolate and camphor. The finish is long, with cedar, musky earth, and lingering dark fruit. Decanting for 30 to 45 minutes at cellar temperature (60–65°F) is recommended. Pairs well with grilled ribeye steak, braised short ribs, aged cheddar, and dark chocolate.
