Fresh wild whole rockfish is a mild, slightly sweet lean white fish with a medium-firm texture and delicate flaky meat. This versatile Pacific rockfish is caught in Canadian waters and is sold whole, making it ideal for a variety of cooking methods including baking, broiling, pan-frying, steaming, or grilling. Rockfish, also known as Pacific red snapper or rock cod, has a slight pinkish hue and adapts well to most seafood recipes.
Rockfish is exceptionally high in lean protein with about 20 grams per 100g serving, providing all nine essential amino acids. It is rich in omega-3 fatty acids which support heart health and reduce inflammation. This fish is an excellent source of selenium, an important antioxidant that supports thyroid function and immune health, as well as vitamin D for bone health, vitamin B12 for nervous system function, phosphorus for strong bones and teeth, and potassium for cardiovascular health. The whole fish format allows for traditional preparations and maximum freshness.
Best cooking practices include not overcooking the delicate flesh, as it cooks quickly and should flake easily when done.
