Made by Cypress Grove in Arcata, California, it is defined by three distinct layers: a minerally bloomy rind, a savory oozy creamline, and a lemony, cheesecake-like paste threaded with earthy black truffle. The flavor profile delivers heavy floral, herbaceous, and mushroom notes that make it one of the most celebrated artisan cheeses in the country.

Like all soft-ripened cheeses, Truffle Tremor ripens from the outside in — as it matures, the creamline develops and the flavor intensifies dramatically. This cheese is sold cut and wrapped by the pound. For optimal quality, keep refrigerated at 32–40°F, wrapped in wax or parchment paper to allow it to breathe. Remove from refrigeration at least one hour before serving. Truffle Tremor uses microbial (non-animal) rennet. It pairs beautifully with Belgian Dark, Stout, or Tripel beers, or with Gewürztraminer, Moscato, or Riesling wines.
