Beef flap meat, also known as Bavette steak, is a flavorful cut from the bottom sirloin section of the steer. It features long strands of loosely connected muscle fibers that become exceptionally tender when sliced against the grain, and its open grain structure readily absorbs marinades, making it ideal for flavor-infused preparations.
This cut is sold as a full case, priced per pound, and is well-suited for fajitas, stir fry, and grilled applications. Costco uses blade tenderization (mechanical needle puncturing) to enhance tenderness, which requires the meat to be cooked to a minimum internal temperature of 145°F (medium). Full cases average approximately 70 lbs. The product is typically USDA Choice grade.
