COVAP Ibérico Bellota Lomo is a premium dry-cured pork loin sourced from 100% Ibérico breed pigs raised free-range on natural Spanish pastures. These pigs are fed a diet of acorns (bellota) and natural grasses during the montanera season, which imparts the product's characteristic rich flavor, distinctive pink color, and beautifully marbled fat. The loin (lomo) is cured using traditional Spanish methods for a minimum of 70 days, producing an exceptionally tender and juicy texture with a delicate hint of salt and natural spices.

This item is sold randomly weighted (RW) at the Costco deli counter, allowing it to be purchased by the pound and sliced to order. COVAP (Cooperativa del Valle de los Pedroches) is one of Spain's most respected Ibérico pork producers, known for their rigorous standards in free-range animal husbandry and traditional curing techniques. Lomo Ibérico de Bellota is considered one of the most prized cuts of the Ibérico pig, alongside jamón and paleta.
