These premium whole head-on farmed black tiger shrimp (Penaeus monodon) are graded U-4, meaning under 4 shrimp per pound — making them among the largest commercially available shrimp in the world. Sold by the pound, each shrimp is presented in its entirety with head and shell intact (HOSO), preserving maximum flavor and freshness for cooking.
Black tiger shrimp are the largest of the 300 commercially available shrimp species, with harvest sizes typically averaging 9 to 11 inches. They are distinguished by their striking gray-to-black stripes on gray or bluish shells. When cooked, the shell turns bright red and the white flesh takes on an orange-red hue. Farmed black tigers have a mild, slightly sweet flavor and tender texture, making them highly versatile in the kitchen. These shrimp are excellent grilled on skewers, steamed, boiled, sautéed, or broiled. Their thick shells retain heat efficiently, so they cook quickly — take care not to overcook. For best results, consume within two days of thawing.
