Papillon Roquefort is a semi-soft, unpasteurized sheep's milk blue cheese imported from the Roquefort-sur-Soulzon region of southern France, carrying a Protected Designation of Origin (PDO). Fromageries Papillon, a family-owned dairy founded in 1906, crafts this cheese using time-honored methods passed down through generations in the limestone caves beneath the Combalou plateau.
The cheese features a white paste with striking streaks of intense blue-green mold throughout its cavities, created by a proprietary Penicillium roqueforti strain that defines Papillon's signature character. It has a rich, flexible, and slightly granulated texture balanced by a long-lasting, savory saltiness. Each wheel is ripened for at least 5 months in the natural cellars of the Papillon dairy, developing a complex, creamy, and buttery flavor profile. This package is aged over 90 days and contains approximately 11 one-ounce servings.
