Penley Estate Phoenix Cabernet Sauvignon is a 100% Cabernet Sauvignon from Coonawarra, South Australia's most celebrated Cabernet region. Produced by Penley Estate, a winery established in 1988, this wine showcases the hallmark character of Coonawarra's iron-rich terra rossa soils.

The wine opens with a complex bouquet of black plum, blackcurrant, anise, and fresh thyme with hints of purple flowers. On the palate it is medium-bodied with a juicy core of ripe fruit, integrated French oak notes, and seamless powdery tannins that build to a long, satisfying finish. The 2021 vintage was aged for 12 months in a combination of 65% seasoned French oak, 5% new French oak, and 30% stainless steel, preserving freshness while adding structure. It has earned scores of 91–92 points from James Suckling, Wine Enthusiast, and Wine Advocate. Pairs well with grilled steak and hearty red meat dishes. Sold in a 750 mL bottle.
