Fresh pork St. Louis style spare ribs sold per pound and sliced between each bone for easy preparation. St. Louis style ribs are trimmed into a neat rectangular rack from the belly side of the rib cage, offering meatier and more flavorful cuts than baby back ribs with a little more fat that keeps them juicy when slow-cooked. These pre-sliced ribs eliminate the need for cutting between bones, making them convenient for grilling, smoking, or oven-baking.
The ribs feature rich, tender meat with excellent marbling that becomes melt-in-your-mouth tender when cooked properly. They are best prepared with a dry rub and slow-cooked at low temperatures, reaching an internal temperature of 195°F to 200°F for fall-off-the-bone tenderness. Popular cooking methods include grilling with indirect heat for 2-2.5 hours, smoking at 275°F, or oven-baking at varying temperatures for optimal results. The meat pairs wonderfully with BBQ sauce, dry rubs featuring brown sugar and smoked paprika, and benefits from basting during the final cooking stage.
