Sho Chiku Bai Shirakabegura Kimoto Junmai is a premium Japanese sake from Takara Shuzo, brewed at the renowned Shirakabegura brewery in Hyogo Prefecture. This Junmai sake uses 100% Gohyakumangoku rice polished to 70%, brewed using the traditional kimoto method — a centuries-old fermentation technique dating to the Edo period that employs a hand-crafted "yamaoroshi" rice paste starter to cultivate natural lactic acid bacteria and yeast. The result is a sake of exceptional depth, with robust umami, gently bold acidity, and a round, velvety mouthfeel. ABV is 15.5%.
This sake reveals a dual character depending on serving temperature. Served warm, it blossoms with earthy apple, creamy cheese, and spice notes. Chilled, it offers delicate aromas of vanilla, flowers, melon, stone fruit, and sweet milk, with a savory, umami-rich finish.
