Ohishi Distillery Sherry Cask Whisky is a distinctive Japanese whisky produced at the Ohishi Distillery in Kumamoto, Japan, on the banks of the Kuma River. Founded in 1872, Ohishi Distillery crafts this whisky from 100% rice — specifically the traditional "gohyakumanishi" variety — grown organically with koi carp used for natural weed control instead of herbicides. The distillery grows at least 30% of its own rice, reflecting a deep commitment to quality from grain to bottle.

Unlike Scotch-style whiskies made from malted barley, Ohishi employs both malted and unmalted rice, distilled in stainless steel pot stills, resulting in a spirit closer to an uncut barrel-aged shochu in tradition. The new make spirit is then aged in ex-Sherry casks, which impart a rich, deeply fruited character. Bottled at 43.3% ABV, non-chill filtered and with natural color, this expression delivers the full, uncorrupted character of the cask.

On the nose, the whisky opens with sherry sweetness layered with oak, citrus, ash, and dried dark fruits. The palate delivers a lush sherry character with notes of raisins, vanilla, citrus peel, oily roasted nuts, and a hint of pepper. The finish is long and warming, accented by cocoa, dark fruit, ash, and spice.
