Bridgford White Ranch Yeast Roll Dough is a professional-grade frozen dinner roll dough designed for foodservice and high-volume baking. Each case contains 240 individually pre-formed rolls weighing 1.5 oz apiece, packed in a tray format ideal for efficient kitchen workflow. This is a proof-and-bake product — rolls go straight from the freezer to proofing without thawing.

To prepare, arrange the frozen rolls on a greased sheet pan spaced about 1 inch apart and brush with melted butter or vegetable spray. Allow rolls to proof in a warm, draft-free area for approximately 1.5 hours, or until they have at least tripled in size. For accelerated proofing, rolls may be placed covered in a refrigerator overnight at around 40°F. Bake in a preheated 375°F conventional oven for 12–14 minutes, or in a convection oven at 325°F for 10–12 minutes. One layer of 60 rolls fills a standard 18x26-inch baking sheet pan. Brush with melted butter immediately after baking for a soft crust. The frozen product has a 270-day shelf life.
