Domaine Antoine Olivier "Les Coteaux Sous la Roche" is a white Burgundy from the Santenay appellation in the Côte de Beaune, made from 100% Chardonnay grapes. The grapes are sourced from a single south-facing vineyard called "Coteaux Sous la Roche," meaning "under the rocks," where the stony soil imparts a distinctive mineral character. The estate follows sustainable and organic farming practices, and grapes are hand-picked and carefully sorted before vinification.
This is an opulent wine with a lively salty, mineral quality and a hint of liquorice. The nose features vibrant lime zest, slate, and white flowers, while the palate is rich and creamy with bright, juicy acidity and elegant balance. Tasting notes include citrus, lemon, oak, vanilla, butter, apple, apricot, and honey, with a long, lingering finish. Fermentation uses natural yeasts in barrel, and the wine is aged for 12 months in traditional 228-litre Burgundian barrels with 25% new oak, followed by six months in tank before bottling. ABV is 13.5%. Contains sulfites. Pairs well with shellfish, oysters, white meats, pasta, rich fish, mild cheeses, and cured meats. 750ml bottle.
