Shenk's Homestead Sour Mash Whiskey honors the legacy of historic American whiskey figure John Shenk, who in 1753 founded a distillery that later became known as Michter's in the 20th century. This Kentucky sour mash whiskey is made using the traditional sour mash process, where a portion of previously distilled whiskey mash is added into the next batch. This full-bodied small batch whiskey is bottled at 91.2 proof (45.6% ABV).
Made with a substantial amount of rye in the mashbill, including malted rye and caramel malt, this expression offers a distinctive rye-forward character. The whiskey is aged in specially selected barrels, including French oak sourced from the Vosges region that has been naturally air-dried and seasoned for 24 months before being toasted to precise specifications. Some batches incorporate toasted-only French oak barrels that are not charred, which accentuates the rye spice notes and adds complexity.
Tasting notes reveal a warm and rich experience with dark amber color. The nose presents toasty burnt sugar, spice, honey, and hints of crème brûlée. The palate delivers an herbaceous whiskey with smooth spice, dried fruits, nougat, toffee, burnt sugar, and baking spices complemented by a creamy mouthfeel. The finish is smooth with lingering spice and elegant oak characteristics. This whiskey offers a unique funky oak character reminiscent of well-aged premium expressions, with complex layers of caramel, leather, and earthy undertones that develop over time.
