Costco's Kirkland Signature freshly made nigiri features wild-caught ahi tuna and farm-raised Atlantic salmon, prepared daily in-store at select Costco locations with dedicated sushi counters. Sold by the pound at the Service Deli counter, each tray contains approximately 12 generously portioned pieces of nigiri with thick-cut fish laid over hand-formed rice balls.
The rice is a key differentiator: Costco uses Tamaki Gold short-grain rice, chosen for its ability to maintain a balanced stickiness and firmness without drying out over the course of the day. To perfect the technique, Costco worked with rice masters in Japan before launching the program. The nigiri is assembled fresh in a dedicated temperature-controlled sushi preparation room, with new batches placed out multiple times per day and all items removed from the case within 24 hours to ensure peak freshness.
A robotic arm forms each nigiri rice ball for consistency, while the fish is cut and placed by trained staff. The tray typically includes soy sauce, pickled ginger, and wasabi. This item is part of Costco's Kirkland Signature Sushi program, which first launched in the continental U.S. at the Issaquah, Washington location and has since expanded to additional stores.
