Rivoire-Jacquemin Comté is an authentic French PDO hard cheese from the Jura region, pre-cut into convenient 1.4-pound portions. Comté is an alpine cheese similar to Gruyère, crafted exclusively from raw cow's milk and aged in traditional cave cellars on spruce planks. It delivers persistent notes of apricot, hazelnuts, and toffee, with intensity that deepens with age.
The Rivoire-Jacquemin family has been producing world-class Comté since 1860, when Alix Jacquemin pioneered the cave-ripening process. Today, five generations later, the family — together with 400 milk producers, 25 fruitières, and master cellarmen — produces 110,000 Comté wheels annually. Each wheel is hand-salted with Guérande sea salt, rubbed, flipped, and individually graded by the head maître affineur to ensure exceptional quality and traceability down to the specific farmer and micro-terroir.
This versatile cheese is excellent for snacking, cheese boards, melting in gratins and fondues, or pairing with nearly any wine. Store refrigerated.
