Société Roquefort Caves Baragnaudes is an authentic French blue cheese made from unpasteurized sheep's milk and aged in the natural caves of Roquefort-sur-Soulzon in the south of France. This Protected Designation of Origin (PDO) cheese is produced by Société des Caves de Roquefort, the largest and most famous Roquefort producer. Baragnaudes la Delicatesse is a creamier, milder blue cheese variant often exported to America for Christmas shopping, featuring a pleasant lingering flavor with delicate taste and legendary flavor profile.

The cheese undergoes an 8-day make process before being transported to the ancient caves, where it is pierced with 40 needles to allow the Penicillium roqueforti mold to develop. Each wheel sits untouched on salted wooden shelves for 14 to 25 days in caves with natural temperature and humidity regulation through fleurines (natural faults in the earth). After hand-wrapping in tin foil by skilled craftspeople, the cheese completes its aging process in cold rooms at 32°F until it reaches perfect maturation.
