The Wedding Cuvée is Iron Horse's interpretation of a Blanc de Noirs, crafted primarily from Pinot Noir with a component of Chardonnay to add structure and acidity. Hand-harvested grapes are gently whole-cluster pressed in the chill of early morning to preserve delicate aromatics. The juice undergoes slow, cool fermentation in stainless steel tanks, and the wine is finished in the traditional méthode champenoise style. The result is a wine pale salmon in color with lively, persistent bubbles and a silky mousse. On the nose it offers expressive aromas of fresh raspberry, strawberry, lemon zest, and hints of graham cracker and fresh ginger. The palate delivers vibrant red fruit flavors, creamy texture, and crisp acidity leading to a long, elegant finish.
