Premium USDA Choice bone-in beef chuck short ribs, pre-sliced for convenient preparation. These ribs feature excellent marbling for tender, juicy, and flavorful results. Ideal for smoking, braising, or slow cooking.
Chuck short ribs are cut from the chuck primal and typically sold in 4-bone racks weighing 5-6 pounds each. The bone-in cut provides superior flavor and helps retain moisture during cooking. USDA Choice grade beef has less marbling than Prime but delivers high quality with excellent tenderness when properly prepared. The pre-sliced format allows for even cooking and easy portioning.
Popular preparation methods include smoking at 225-275°F for 5-7 hours until the internal temperature reaches 200°F and the meat probes like butter. Also excellent for Korean-style braised short ribs (galbi), traditional American-style braising, or grilling. The rich beef flavor pairs well with simple seasoning like coarse salt and black pepper (dalmatian rub) or more complex spice blends.
