Valravn Cabernet Sauvignon from Sonoma County, California is a boldly expressive red wine sourced from premier appellations including Alexander Valley, Moon Mountain, and Sonoma Valley. The wine is a blend led by Cabernet Sauvignon with supporting varieties such as Merlot, Cabernet Franc, Petite Sirah, Petite Verdot, Malbec, and Syrah, crafting a wine that captures the full complexity of Sonoma's diverse terroir. Grapes are hand-sorted and undergo an extended cold soak before primary fermentation in stainless steel tanks. The wine is then racked to French oak barrels for 18 months of aging, building structure and depth while preserving the fruit's natural vibrancy.
On the palate, rich layers of dark blue and black fruits take center stage, with late-season blackberries, cassis, and marionberry complemented by savory notes of espresso, dried herbs, incense, licorice, and chocolate. A subtle amaro-like bittersweetness, hints of graphite, and a slightly ferrous quality add complexity, while chewy tannins and a dry, mineral finish reflect the wine's Sonoma character.
