The Wente Charles Wetmore Reserve Cabernet Sauvignon is a premium estate-grown wine from the historic Livermore Valley. This 100% Cabernet Sauvignon opens with aromas of black currant and cassis, complemented by a hint of Livermore Dust and creamy oak notes bringing roasted cocoa nibs and hardwood complexity. On the palate, the wine offers layers of ripe black cherry and plum, with dark berry notes such as blackberry, complemented by pink peppercorn and a layer of cocoa dust. This full-bodied wine is deep, bold and concentrated with beautifully layered aromatics of rose petals, raspberry and blackberry complemented by intense flavors of ripe plums, red and black fruit with a touch of spice and black tea. The wine features a firm tannin structure with elegantly balanced acidity and a long, satisfying finish. Fermented in stainless steel tanks and aged for 18 months in 40% new French oak and 60% second and third use French oak barrels. The wine is sourced exclusively from the Charles Wetmore Vineyard, consisting of diverse soils such as clay hillsides and gravel. With 14.5% alcohol content, this wine pairs well with grilled beef, five-cheese lasagna, mushroom risotto, strong cheeses like blue and roquefort, salami, bacon-wrapped dates, and dark chocolate cake.
