USDA Choice bone-in beef plate short ribs sold by the full case and priced per pound. This premium cut comes from the plate section of the beef rib, featuring thick, well-marbled meat with generous portions between the bones. Often called "brisket on a stick," plate short ribs offer rich beef flavor and exceptional fat content that renders beautifully during cooking.
Plate short ribs are the longest variety of beef ribs, typically measuring 12 inches in length with approximately 2 inches of meat on top of the bones. The USDA Choice grade ensures quality marbling and tenderness, with less marbling than Prime but still high quality. These ribs come from the lower portion of the rib cavity, close to the brisket and flank steak, which gives them their distinctive rich flavor profile.
