Mimolette is a celebrated French cheese with origins tracing back to the 17th century, when cheesemakers in French Flanders reproduced Dutch Edam cheese after King Louis XIV banned its import—adding annatto (Roucou), a natural dye from the achiote tree, to give it a vivid deep orange color. This version is cave-aged for 20 months in Normandy, France by Isigny Sainte-Mère and is exclusively ripened for Costco under the "Spéciale Réserve" designation.
After 20 months of aging, this Mimolette develops a hard, dense, and slightly crumbly texture comparable to aged Parmesan, with a complex flavor profile featuring intense nutty, salty, and fruity notes reminiscent of pineapple and aged cheddar. The cratered, mottled rind is a hallmark of traditionally aged Mimolette. The deep orange paste is visually striking and makes for a dramatic addition to any cheese board.
This 10.58 oz wedge is made from pasteurized cow's milk in Normandy and carries the French dairy certification FR 50.127.001 CE. Keep refrigerated. Pairs beautifully with pale ales, Malbec, or Cabernet Sauvignon.
