The saku cut is a precision-trimmed, skin-off, bloodline-removed block of tuna loin, ideal for slicing into sashimi, nigiri, poke bowls, tuna tataki, and tartare.

Maldivian yellowfin tuna is pole-and-line caught in the Indian Ocean, a method that results in minimal bycatch and is widely recognized as one of the most sustainable tuna fisheries in the world.
