Premium sashimi-grade yellowfin tuna (ahi) saku blocks sourced from Indonesian waters. "Saku" means "block" in Japanese, referring to the uniform rectangular shape that makes these blocks ideal for cutting into sashimi, sushi, or poke bowls. This wild-caught tuna is harvested by handline fishermen using small vessels, graded fresh, and CO-treated to retain its vibrant red color before being flash frozen. The blocks are skinless, boneless, and well-trimmed for convenience. Indonesian tuna saku products are typically part of a Fishery Improvement Project (FIP) with many suppliers achieving MSC certification, processed in BRC ready-to-eat certified facilities.
Yellowfin tuna has a firm texture and medium flavor profile, making it versatile for various preparations including ceviche, grilling, pan-searing, or serving raw. To thaw, remove from sealed packaging and defrost under refrigeration for a minimum of 4-6 hours until fully thawed. Do not leave soaking in water as this affects flavor and texture.
