Polly-O cheese has been crafted using traditional Italian methods since 1899, when founder Giuseppe Pollio first set up his ricotta and mozzarella kettles in Brooklyn, New York after immigrating from Italy. The brand was the first to manufacture and distribute mozzarella and ricotta on a large scale in the United States. Nearly all Polly-O ricotta is still stirred by hand today at their dedicated plant in Campbell, New York, now operated by BelGioioso Cheese Inc.
