Rush Creek Reserve is a seasonal, washed-rind raw cow's milk cheese produced by Uplands Cheese Company in Dodgeville, Wisconsin. Made only from September through November using fresh evening milk, it is inspired by France's Vacherin Mont d'Or and crafted to reflect Wisconsin's distinctive terroir.

Each 12-ounce wheel is hand-crafted with curds hand-cut and hand-ladled before being encircled in a band of spruce bark, which imparts a subtle woodsy character during aging. The wheels are aged a minimum of two months and receive regular washings with cultures derived from Pleasant Ridge Reserve production, developing a rippling pink rind lightly dusted with natural blue and white cheese molds.

The interior is exceptionally soft and spoonable, with rich, deep, layered flavors reminiscent of savory custard. Dominant notes include smoked and cured meat with secondary undertones of sour cream, fresh grass, and salt. To serve, warm to room temperature or gently heat at 225°F for approximately 15 minutes, peel back the top rind, and scoop the soft paste with a spoon or crusty bread. Pairs beautifully with cured meats, roasted root vegetables, off-dry white wines, and bourbon-based cocktails.
