Mount Eden Estate Cabernet Sauvignon is a prestigious Bordeaux-style red wine from the Santa Cruz Mountains appellation in California, produced by one of the region's most historic wineries. This estate wine is sourced from vines with a lineage tracing back to the 1890s, when viticulturist Emmett Rixford planted cuttings sourced from Chateau Margaux in Bordeaux, France. The current estate vines were established in the early 1980s from these storied selections, grown in extremely thin Franciscan shale soils at high mountain elevations with cool coastal influence from San Francisco Bay and the Pacific Ocean.
The wine is a blend of approximately 75% Cabernet Sauvignon, 22% Merlot, and 3% Cabernet Franc, with the precise cépage varying by vintage. Fermented in small 1,000-gallon stainless steel tanks with manual punch-downs and extended maceration, the wine is then transferred to new Bordelaise château barrels for 22 months of aging, completing malolactic fermentation in barrel. It is racked three to four times per year, then bottled unfined and unfiltered before two additional years of aging prior to release.
The resulting wine is characterized by refreshing acidity and moderate alcohol atypical for California Cabernet. It shows flavors of red currant, blackberry, and earth, with fine integrated tannins. Recommended cellaring is ten to fifteen years from vintage. Sold in a 750 mL bottle.
