DAOU Vineyards Discovery Collection Cabernet Sauvignon from Paso Robles, California. This Bordeaux-style blend is composed of approximately 77-80% Cabernet Sauvignon, 11-16% Petit Verdot, 6-8% Merlot, and a small percentage of Cabernet Franc. The wine is aged for 8 months in 50% new French oak barrels and bottled at 14.5% ABV.

The grapes are sourced from vineyards in the Adelaida District of Paso Robles, where DAOU's hilltop estate sits at 2,200 feet elevation, just 14 miles from the Pacific Ocean. Founded by brothers Daniel and George Daou, the winery is known for producing expressive Cabernet Sauvignon that showcases the unique terroir of California's Central Coast. All fruit is hand-picked and sorted by optical technology, then fermented with proprietary native yeast cultivated from the DAOU Estate using 100 percent free-run juice.

Tasting notes include aromas of black cherry, cassis, plum, and dusty minerality with secondary notes of leather, cedar, and black olive. The palate offers flavors of red and dark fruit, blueberry, cherry, and plum with mocha and baking spice notes. Medium to full bodied with fine-grained tannins and a long, spicy oak finish. Pairs well with grilled red meats, hearty stews, and aged cheeses.
