Chattanooga Whiskey 91 is the signature Tennessee High Malt recipe, a malt-forward approach to straight bourbon whiskey. Made from a four-grain mash bill including yellow corn, malted rye, caramel malted barley, and honey malted barley, this whiskey comprises at least 25% specialty malted grains. Selected among the first 100 barrels from Chattanooga's Experimental Distillery, the original "Barrel 91" recipe was chosen by master distiller Grant McCracken for its distinctive character.

The production process features an extended seven-day attemperated fermentation that highlights rich, high-malt character while adding nuanced, fruity complexity. Carefully distilled at low proofs in a custom 30-foot column still, the whiskey is aged for more than two years in both toasted and charred 53-gallon oak barrels. After aging, batches of 8-12 barrels are brought together into a 4000-gallon charred white oak Solera finishing barrel that rarely goes empty, allowing younger and older whiskey to marry together and develop gradual complexity over time.

Bottled at 91 proof (45.5% alcohol by volume), this non-chill filtered straight bourbon whiskey delivers tasting notes of butterscotch pudding, dried apricot, honeyed toast, and pound cake with a medium-bodied, lingering, malty-sweet finish. The flavor profile is well-balanced, light-bodied yet pleasantly strong, with notes of vanilla, moderate smoky char, brown sugar sweetness on the palate, and a bright finish with hints of cedar.
