The OVIS name derives from the Latin word for sheep, paying homage to the winery's distinctive sustainable farming practice. Shannon Ridge deploys over 1,200 sheep, protected by Great Pyrenees guard dogs, to work the vineyard rows — controlling weeds and cover crops, providing natural fertilizer, and reducing reliance on herbicides and fossil fuels. This cyclical approach connects land, livestock, and vine in a way that reflects the Shannon family's deep commitment to environmental stewardship across their roughly 2,500-acre property in Lake County.

The 2020 vintage presents a deep ruby red color with aromas of cassis, ripe cherries, plums, black pepper, and cloves. On the palate it delivers complex flavors of boysenberry, cassis, dark chocolate, and bay leaf, with a juicy, dry finish. Oak aging contributes notes of toast, vanilla, and chocolate, while the tannins are round and well-integrated. Wine Enthusiast awarded the 2020 vintage 95 Points and named it Best of Year.
