Premium American Wagyu beef plate short ribs sourced from the plate primal, also known as "dino ribs" or "brisket on a stick." These bone-in short ribs are a crossbreed of American Black Angus and Japanese Wagyu cattle, resulting in exceptionally marbled beef that far exceeds USDA Prime standards.
American Wagyu plate short ribs feature abundant intramuscular marbling that creates a rich, buttery texture and intense beefy flavor with savory umami notes. The exceptional marbling renders during cooking, creating incredibly tender, juicy meat that practically melts in your mouth. These ribs are massive and meaty, perfect for smoking low and slow at 275°F for 6-8 hours until reaching an internal temperature of 205°F, or braising for 2-3 hours until fork-tender.
The bone-in presentation adds extra flavor during cooking and creates an impressive presentation. Each rib section includes substantial amounts of rich, delectable beef attached to the bone. Ideal for barbecue enthusiasts, these ribs can be rubbed with Montreal steak seasoning or your favorite beef rub and smoked until the meat pulls back from the bone and a probe slides through like butter. Also excellent for braising with aromatics and stock, or grilling using a two-zone cooking method.
