Distillery 291 Select Barrel Proof Bourbon is a small-batch Colorado bourbon whiskey distilled in the foothills of the Rocky Mountains in Colorado Springs. This award-winning bourbon features a mash bill of 80% corn, 19% malted rye, and 1% malted barley, triple-distilled in copper pot stills and aged in heavily charred new American white oak barrels. Each barrel is finished with toasted aspen wood staves for approximately three weeks before bottling, adding distinctive Colorado character to the whiskey.

The bourbon is bottled at barrel proof, typically ranging from 127 to 131.7 proof (63-65.8% ABV), delivering intense and complex flavors. Tasting notes include dark red cherry, honeycomb, campfire marshmallow, stone fruits like apricot and nectarine, peach cobbler, floral potpourri, herbal tea, mint, black pepper, cloves, and hints of cedar and aspen. The palate is viscous with salted caramel, tropical fruit, dried red and black fruit, peppery spice, and citrusy hop notes from the unique El Passo Process which incorporates secondary stillage from Bristol IPA beer into the mash. The finish is long and warming with sweet lychee, baking spices, herbaceous hops, and dry tannic oak.

Distillery 291 is named after the New York City police code for a disturbance and was founded in 2011 by former fashion photographer Michael Myers. The distillery uses grains from the Colorado plains and Rocky Mountain water to create what they call whiskey that is hardmade the Colorado way. Rugged, refined, and rebellious.
