Castle & Key Harvest Seasonal Gin is a limited release autumn gin bottled at 102 proof (51% ABV). This distinctive spirit begins with a rye whiskey mashbill of 17% yellow corn, 63% rye, and 20% malted barley, distilled into vodka and then redistilled using both vapor infusion and steeping techniques. The production process involves steeping sumac in the rye base during vodka distillation, then redistilling once more with the alcohol vapor passing through gin baskets containing eight carefully selected botanicals: juniper, coriander, angelica root, star anise, cedar leaf, sumac, fennel, and bay leaf.

The flavor profile highlights notes of fall and winter with soft pine, bay leaf, and fresh cracked pepper up front, complemented by tart dark berries, sweet anise, savory herbal notes, and a touch of tanginess. Secondary notes include fresh cedar, licorice, woodsy and earthy tones with cinnamon, fennel, clove, and soft pepper.
