Premium skin-on pork belly cut specifically for shabu shabu, the popular Japanese hot pot dish. This cut features layers of rich, marbled fat interspersed with lean meat, providing exceptional flavor and moisture when cooked. The skin-on presentation adds extra texture and richness to dishes.
Ideal for traditional shabu shabu preparation where thin slices are swished in hot broth for just seconds until cooked, then dipped in ponzu sauce. Also excellent for Korean-style samgyeopsal barbecue, steamed pork belly dishes, slow roasting, or rendering into lard. The high fat content ensures the meat stays tender and juicy during cooking while infusing dishes with deep, savory flavor.
For shabu shabu, slice the pork belly very thinly (about 1mm thickness) and cook by swishing in broth for approximately 5 seconds. Can be marinated in liquid shio-koji for 15-30 minutes to further tenderize and enhance flavor. Serve with ponzu sauce, yuzu-kosho, and fresh vegetables like napa cabbage, mushrooms, and ginger.
