Neil Ellis Cabernet Sauvignon is a benchmark South African red wine from the Stellenbosch appellation, produced by one of the Cape's most respected winemakers. The wine is a blend of 86% Cabernet Sauvignon, 12% Petit Verdot, and 2% Malbec, sourced from established vineyard sites in the Bottelary Hills and Jonkershoek Valley, where vines grow on decomposed granite soils on southwest-facing slopes.

The wine is fermented in stainless steel tanks with pump-overs until dry, followed by further maceration before light pressing. Malolactic fermentation occurs in French oak barrels, and the wine is aged for 18 months in 25% new French oak, with the balance in 2nd, 3rd, and 4th fill barrels. It finishes at 14% alcohol with a total acidity of 6.0 g/l and residual sugar of 1.6 g/l.

On the nose, the wine shows restraint with aromas of blackberry, liquorice, cedar, and dark cherry. The palate is full-bodied with fine, dense tannins and energetic acidity that leads to a long, juicy finish with notes of pencil shavings, graphite, and dark fruit. Critics from Wine Advocate, Wine Spectator, James Suckling, and Wine Enthusiast have each awarded the wine 91–92 points. It benefits from decanting if opened young and can be cellared through 2034–2035. Pairs well with bone-in chargrilled steaks and hearty red meat dishes.

Neil Ellis Wines was founded in 1993 with a philosophy of sourcing grapes from top regional growers. The winery operates sustainably and is led by winemaker Warren Ellis, producing approximately 50,000 nine-liter cases annually.
