Ginga Shizuku "Divine Droplets" is a premium Junmai Daiginjo sake from Kojima Sohonten Brewery, one of Japan's oldest active breweries, founded in 1597 in the Yonezawa region of Yamagata Prefecture. Crafted from locally grown Dewasansan rice milled to 50%, this sake is finished using the shizuku gravity-drip method — the mash is placed in canvas bags and the sake is allowed to drip out slowly by gravity alone, with no mechanical pressing, yielding extraordinary purity and silky texture.

The nose opens with vibrant aromas of pineapple, white peach, green apple, mint, and pear. On the palate it is refreshing and clean, with flavors of ripe melon, peach, and pineapple and a lively pop of white pepper and acidity. At 16% ABV with a Sake Meter Value of +3 and acidity of 1.4, it finishes bright and uplifting.

Excellent paired with smoked salmon and cream cheese blinis, grilled shrimp or chicken, olive tapenade, and vinegar-based salads. Best served chilled in a white wine glass.
