Named "bijou" meaning "jewel" in French, this cheese features a hand-shaped button design with a dense, creamy center and distinctive wrinkled Geotrichum rind. Aged for approximately 30 days, Bijou develops a unique sweet and yeasty flavor profile with increasing sharpness and complexity as it matures.
