Beef Chuck Short Ribs, Bone-In, USDA Choice, sold per pound at Costco warehouses. These bone-in short ribs are cut from the chuck section of the cow and carry the USDA Choice grade, the second-highest designation awarded by the USDA, indicating high-quality beef with good marbling for excellent flavor and tenderness.
USDA Choice beef has less marbling than Prime but remains tender, juicy, and full of rich beefy flavor. Chuck short ribs are thick, meaty cuts with the bone attached, making them an excellent choice for slow cooking methods that allow the collagen and connective tissue to gradually break down into a rich, silky texture.
