DAOU Bodyguard Chardonnay is a full-bodied, opulent white wine crafted by DAOU Vineyards in Paso Robles, California. Founded by brothers Georges and Daniel Daou, the winery sits at 2,200 feet elevation on DAOU Mountain in the Adelaida District — the highest point in the Paso Robles AVA. Daniel Daou serves as winemaker, and his wines have been instrumental in elevating Paso Robles as a premier California wine region.
This Chardonnay sources fruit from Paso Robles and the Santa Barbara appellation, where Pacific Ocean proximity and cooling breezes through the Templeton Gap allow for gradual, even ripening. Cold fermentations preserve vibrant aromatics, and the wine is aged in a combination of French and American oak barrels to deliver creamy texture and layered complexity. Alcohol is 14.5% ABV.
The wine opens with a deep golden color and a fragrant nose of spiced pear, star jasmine, vanilla bean, and tropical notes. On the palate, flavors of white peach, pineapple, honeydew melon, lemon zest, yellow apple, and citrus are woven with hints of oak, butter, vanilla, cinnamon, and crushed stone. The finish is lush and lingering, with impressions of citrus and almond. It pairs well with rich fish such as salmon, halibut, and tuna, as well as poultry, pork, and aged cheeses including gruyère, camembert, and blue cheese.
