Low Gap Bourbon is a craft California whiskey produced by Mendocino Spirits in Mendocino County, California. Distilled by artisan distiller Crispin Cain, this bourbon is made using an antique cognac still and aged in cured oak barrels, resulting in a distinctly smooth and approachable California straight bourbon.

The mash bill features 80% corn, 19% malted barley, and 1% rye, double distilled to bring out rich, nuanced character. On the nose, expect aromas of caramel, grain, sawdust, vanilla, and candy corn. The palate delivers flavors of young wood, caramel, spice, butterscotch, and nuts, with a medium-length finish of toffee, nuts, wood, and spice. Pairs well with smoked pork, salty snacks, and dried fruit.
