Empress 1908 Indigo Gin is a handcrafted Canadian gin micro-distilled in small batches using traditional copper-pot stills by Victoria Distillers in Sidney, British Columbia. The gin features eight carefully selected natural botanicals that create a distinctive flavor profile balancing traditional citrus notes with warm herbal earthiness and a soft texture.
The signature ingredient is butterfly pea blossom, discovered in a tea blend served at the historic Empress Hotel in Victoria, which imparts the gin's natural deep indigo hue and provides flavors similar to angelica root in traditional gins. Additional botanicals include juniper berries, grapefruit peel, rose petals, and a signature black tea blend exclusive to the Empress Hotel created by Metropolitan Tea Company. The black tea is a seasonal selection from Assam, Kenya, South India, Ceylon, and China, offering floral, fruity, and oaky notes.
The unique indigo color naturally changes to bright lavender, soft pink, or fuchsia depending on the mixer used in cocktails, creating a remarkable visual presentation. Since the color is completely natural with no artificial dyes, it will fade over time especially when exposed to sunlight. This Pacific Northwest style gin uses a subtle juniper varietal that balances nicely with less traditional botanicals, creating an approachable yet sophisticated taste profile at 42.5% ABV.
